Home to The Game Bird restaurant and the renowned American Bar, the hotel has long been a destination for discerning travellers and gourmands alike. With a wealth of experience and a reputation for innovation, Michael will shape the hotel’s culinary vision, working closely with its talented team to enhance and elevate dining experiences throughout the hotel. Tucked away in historic St. James’s and prestigious Mayfair, The Stafford London is celebrated for its timeless elegance, exceptional service, and rich heritage – the perfect combination to complement Michael’s own acclaimed style and experience.
Michael honed his skills under the guidance of culinary legends like Raymond Blanc, Joël Robuchon, and Bernard Loiseau, paving his way to becoming one of the UK’s most renowned and respected chefs.
Driven by his experiences and vision, he set out to create his own luxury hotel. In 2017, he opened Lympstone Manor, a five-star country house hotel featuring a vineyard and an acclaimed restaurant. Just six months after its debut, the restaurant was awarded a Michelin star and has since earned 5 AA Rosettes and 2 Michelin Keys.
Beyond his acclaimed career in Michelin-starred kitchens, Michael also regularly appears on popular TV cooking shows such as Sunday Brunch, Great British Menu, and Cooking with the Stars. Michael has also played a pivotal role in shaping the next generation of chefs through the Michael Caines Academy at Exeter College. Many of his protégés have gone on to earn Michelin stars across the UK and Ireland. At Lympstone Manor, he pioneered the production of English wine from the hotel-restaurant’s own vineyard. His extraordinary contributions to the culinary world were recognised with an MBE in 2006.
