The Heritage Village Resort Goa announced the launch of Bonita recently—a premier dining destination in the heart of Arossim, South Goa.“Bonita is not just a restaurant; it is a celebration of inventive modern cuisine, an exceptional spirits and beverage selection, Music and a vibrant, enchanting atmosphere that promises an unforgettable dining experience. Our menu showcases a dynamic array of dishes that span European, American, Western and South Asian cuisines. With a focus on fresh, locally-sourced seafood and farm produce, each dish is crafted with meticulous attention to detail and presented in a kinetic format. From raw tapas-inspired salads and bisque-centred soups to eclectic small plates, hand-crafted burgers, and signature mains, every plate tells a story of culinary excellence,” said Guitry Velho, director and vice president, Heritage Village Resort and Spa, Arossim, Goa.“At Bonita, guests can enjoy the interactive experience of a live kitchen, watch as our chefs skilfully prepare dishes, and savour the delicious aromas wafting from our state-of-the-art pizza oven. Our menu boasts a diverse selection of culinary delights, with an emphasis on fresh, locally-sourced ingredients and seafood,” he added.Chef Sanchit Behl who heads the restaurant spoke about the culinary theme of the restaurant saying, “Our restaurant is born out of a passion for crafting inventive modern cuisine that not only delights the palate but also tells a story through each dish. At Bonita, we believe in the power of fresh, locally-sourced ingredients, especially the bountiful seafood and farm produce that Goa is renowned for.“Our menu is a dynamic tapestry of flavours and textures, presented in a kinetic format that ensures every bite is an adventure. We start with raw tapas-inspired salads that celebrate the natural essence of our ingredients. Our soups, featuring Miso, wild mushrooms, and rich bisques, offer a comforting yet sophisticated start to your meal”.Bonita, which is owned by the Heritage Village Resort functions independently of the hotel—guests can access the restaurant without having to come into the resort. It has seating for 70 inside its 1950 square feet of air-conditioned space. A further 40 covers will be added to the sprawling garden from November onwards, a release stated.
